High-Protein Low-Carb Bread
Dry Ingredients
1 cup vital wheat gluten
1/2 cup oat fiber (not oat flour)
1/4 cup whey protein isolate (unflavored)
2 tablespoons psyllium husk powder
1 1/2 teaspoons salt
1 teaspoon baking powder
Wet
1 2/4 cups warm water (105-110F)
1 tablespoon olive oil or avocado oil
1 teaspoon apple cider vinegar
Instructions
Course: Basic White or homemade
Loaf Size: Small
Crust: Light
Mix check: After 5-10 minutes, the dough should form a soft, elastic ball.
If crumbly, add one tablespoon of water
If sticky, add 1 teaspoon oat fiber
